Vegetables in butter garlic sauce with coriander rice

Ingredients

For vegetables

Broccoli florets                        1/2 cup
Baby corns (cubes)                 1/4 cup
Green capsicum (cubes)        1/4 cup 
Red bell pepper (cubes)          1/4 cup
Boiled potatoes (cubes)          1/2 cup
Boiled peas                                1/4 cup
Garlic chopped                           2 tbsp
Butter                                          3 tbsp
Salt                                              to taste
Black pepper powder               1/2 tsp
Red chili flakes                         1/2 tsp
Oregano                                     1/2 tsp
Mixed herbs                              1/2 tsp

For coriander rice

Rice (boiled)                               1 cup
Butter                                          4 tbsp
Green Coriander (chopped)     2 tbsp 
Salt                                               to taste
Black pepper powder                1/2 tsp

Method

Heat 3 tbsp of butter in a non stick pan.
Add chopped garlic and saute till the garlic becomes golden brown.
Add salt, black pepper, red chili flakes, oregano and mixed herbs. Mix well.
Add some water and cook for 2 minutes.
Add all the vegetables into the sauce. Mix well and cook for 5 minutes on medium flame. Vegetables are ready.
For coriander rice, heat butter in a non stick pan. Add boiled rice, salt, black pepper and green chopped coriander. Mix all the ingredients well. Coriander rice is ready.
Transfer the vegetables and rice into a serving platter. Vegetables in butter garlic sauce with coriander rice is ready. Serve hot.
