MUTTON CURRY

Ingredients

Mutton                                 1 kg
Onions (sliced)                   1 1/2 cup
Tomatoes (chopped)         1 cup
Ginger-Garlic Paste           2 tbsp
Bay leaf                                2
Black cardamon                 3
Green cardamon                4 
Cloves                                  4
Cinnamon stick                 2 inch
Black pepper corns           4 
Kashmiri  lal mirch           2 tbsp
Coriander powder             3 tbsp 
Garam masala                    2 tbsp
Red chili powder               1 tbsp
Turmeric powder               1 tsp 
Salt                                       to taste
Mutton Masala                  2 tbsp
Curd                                     1 cup
Oil                                        5 tbsp

Method

Wash mutton properly and keep aside. Put curd in a bowl. Add 1 tsp salt, red chili powder, garam masala, mutton masala, coriander powder and mix well.
Marinate the mutton into the mixture and refrigerate for 20 minutes.
Heat oil in a pressure cooker. Add bay leaf, black cardamon, green cardamon, cloves, cinnamon stick and black peppercorns. Saute for 1 minute.
Add sliced onions and cook till it becomes golden brown. Add chopped tomatoes and cook till tomatoes become pulpy. Add ginger garlic paste and saute for 1 minute.
Add marinated mutton pieces into pressure cooker and stir for 5 minutes.
Add kashmiri lal mirch powder, coriander powder, garam masala, red chili powder, turmeric powder and salt. Saute for 1 minute.
Add 2 cups water and stir.
Close the pressure cooker and cook on high flame. After 2 whistles simmer the gas and cook for 40-45 minutes on low flame. Mutton curry is ready .
Transfer the mutton curry into serving dish and garnish with green coriander spring and serve hot.
