Meethi Boondi

MEETHI BOONDI

Ingredients:

Gram Flour (Besan)                              1 cup
Sugar                                                        3/4 cup 
Green cardamon powder                     1 tsp
Saffron                                                     1 pinch
Ghee                                                         for frying
Melon seeds (magaz seeds)                 4 tsp

Method:

Heat ghee in a non-stick wok for frying. Take gram flour and water in a bowl and make a smooth batter.
Put a drop of batter into hot ghee. If it becomes flat then batter is thin, add more besan to it. If it becomes tail ended then batter is thick, add more water to the batter. Now take a dry perforated spoon ladle and place it over hot ghee. Now start pouring batter through the ladle.
Fry the boondi till they are cooked (not crispy). Remove the boondi and put on a tissue paper.
For sugar syrup, take one cup of water and add 3/4th cup of sugar.
Bring to boil while stirring continuously.
Simmer the flame and cook till the syrup thickens. Add saffron, green cardamon powder and stir.
Cool for some time (till it becomes warm). Add boondi to it and mix well.
Add 2 tsp of melon seeds and mix properly. Meethi boondi is ready. Transfer to a serving bowl. Garnish with melon seeds.
