Cheese Masala Dosa

Ingredients:- 

For Dosa Batter

Rice                                                   2 cups
Dhuli Urad Dal                               1 cup 
Fenugreek seeds                            1 tsp

For Cheese masala

Mozzarella Cheese (grated)         1 cup
Onion (chopped)                           1/2 cup
Boiled corns                                   1/2 cup
Yellow Bell pepper (cubes)         1/4 cup
Red Bell pepper (cubes)              1/4 cup
Potato Masala                                1 cup
Salt                                                   to taste
Red chili powder                           1 tsp
Garam masala                               1 tsp

For Dosa

Oil                                                   for frying
Butter                                             2 tbsp
Coconut chutney

Method :-

Wash rice and dal properly.
Soak rice, urad dal and fenugreek seeds in 6 cups of water for 6~7 hours. Drain the water and grind to make a smooth batter.

Leave the batter to rest for 7~8 hours in a warm place for fermentation. When the batter is ready, mix it thoroughly and add salt to taste. Heat Dosa Tawa. Spray oil on the dosa tawa. Put half cup of batter on the dosa tawa and spread uniformly.
Simmer  the flame. Add half tsp of butter and spread on the dosa properly. Add one tbsp of onions, corns, yellow and red bell pepper to the dosa.
Sprinkle salt, red chili powder and garam masala to taste.
Add potato masala to the dosa and spread uniformly.
Add a layer of grated mozzarella cheese and cook for 1~2 minutes on lower flame.
Fold the dosa. Cheese masala dosa is ready to serve. Tranfer to a serving plate. Serve hot with coconut chutney.
