Sabudana Vada
Kitchen kingdom brings to you its third Navratri Special dish - "Sabudana Vada".

Ingredients :- 

Sabudana                                                  1/2 cup
Potato (boiled)                                         3 nos
Roasted peanuts (crushed)                   1/2 cup
Roasted peanuts (whole)                      2 tsp
Green chili (chopped)                            2 tsp   
Cumin seeds                                            1/2 tsp
Salt                                                             to taste
Red chili powder                                     1/2 tsp
Coriander powder                                   1 tsp     
Garam masala                                          1 tsp
Turmeric powder                                    1/2 tsp
Dry mango powder                                 1 tsp
Oil                                                               for frying
Ghee                                                           2 tsp
Fresh coriander spring                           for garnish

Method:-

Soak half cup of sabudana in 3 cups of water for 5 hours. Sieve and keep sabudana aside for half hour.
Mash the boiled potatoes and keep aside. Heat ghee in a non-stick pan. Add cumin seeds, half tsp of salt and turmeric powder. Add mashed potatoes, two tsp of roasted peanuts (whole) and mix well. Cook for 2 minutes (till the mixture becomes uniform). Potato mixture is ready.
Take a bowl. Add soaked sabudana, green chili, crushed roasted peanuts and potato mixture.
Mix well. Add salt, red chili powder, coriander powder, garam masala and dry mango powder.
Mix well to make a dough.
Grease palm with oil. Make small vadas of the dough and keep aside.
Heat oil in a wok. When the oil becomes hot, put the vadas into the wok.
Deep fry on a low flame till it becomes crispy from both sides.
Take out the vadas from the wok and keep on a tissue paper.
Sabudana vada is ready. Transfer to a serving plate.Garnish with green coriander spring.
Serve hot.
