Sabudana Kheer

In continuation with our Navratri special series, Kitchen Kingdom presents its second dish - "Sabudana Kheer". As it is evident from its name, it is a sweet dish.

Ingredients:-

Milk (Full Cream)                       1 litre 
Sabudana                                     1/2 cup
Sugar                                             7 tbsp
Green cardamom powder         1/2 tsp
Saffron                                          1 pinch
Almonds (chopped)                   for garnish  

Method:-

Soak 1/2 cup of sabudana in 3 cups of water for 5~6 hours. Sieve the soaked sabudana and let it rest for 1 hour.
Take a non-stick pan. Add one litre of milk to the pan and bring to boil.


Add soaked sabudana and stir.
Simmer the flame and cook for 20 minutes (till it reduces to your liking and sabudana is cooked). Stir occasionally.
Add sugar and mix well (Sugar quantity can be adjusted according to taste). Cook for 5 min. Add green cardamom powder and mix well.
Add saffron and cook for 2 min.
Sabudana kheer is ready.
Transfer to a serving bowl. Garnish with chopped almonds. Serve hot. You can also keep it in a refrigerator and serve chilled.
