Kuttu Atta Sandwich with Tomato chutney

For today's dish, we have brought a new and tangy twist to Kuttu ka atta (Buckwheat flour) and potato. Please try and share views with us.

Ingredients :-

For Sandwich

Buckwheat flour (Kuttu ka atta)             1 cup
Boiled potatoes (Mashed)                        4 nos
Roasted peanuts                                        2 tbsp
Cumin seeds (Jeera)                                 1/2 tsp
Desi ghee                                                     2 tbsp
Salt                                                                to taste
Red chili powder                                        1/2 tsp 
Coriander powder                                     1 tsp
Garam masala                                            1 tsp
Turmeric powder                                       1/2 tsp
Dry mango powder                                   1 tsp
Green chili (chopped)                              2 tsp
Green coriander (chopped)                     2 tsp

For Chutney

Tomatoes                                                    4 Nos
Desi ghee                                                     2 tbsp
Cumin seeds                                               1 tsp
Salt                                                               to taste
Red chili powder                                       1 tsp
Dry mango powder                                   2 tsp
Coriander powder                                     1 tsp
Garam masala                                           1/2 tsp
Sugar                                                           2 tsp 

Method:-

Boil tomatoes for 5 minutes.
Remove the skin of boiled tomatoes and chop the tomatoes and keep aside. Heat ghee in a non-stick pan. Add cumin seeds and saute for one minute.
Add chopped tomatoes and cook for two minutes.
Add red chili powder, coriander powder, garam masala, dry mango powder and salt to it. Mix well and cook for five minutes.
Add sugar and saute.
Add half cup of water and stir.
Cover the lid and cook for 10~15 min on low flame till it thickens.
Stir occasionally. Tomato chutney is ready.
Heat ghee in a pan. Add cumin seeds to it.
Add mashed potatoes and saute for two minutes.
Add red chili powder, turmeric powder, coriander powder, garam masala, dry mango powder, and salt.
Mix all the items and cook for 2 minutes on low flame.
Add green chili and green coriander and mix well.
All roasted peanuts to the mixture and mix well.
Potato mixture is ready.
Grease palms with oil. Take some potato mixture and make tikki by pressing. Keep aside. 

Take kuttu ka atta in a bowl. Add half tea-spoon of salt. Mix well. Add water to it to make a thick mixture.
Heat ghee in a pan. Put 2 tbsp of mixture into the pan and spread uniformly to make small pancakes.
Simultaneously, cook potato tikki from both sides till it becomes crispy.
When both tikki and pancakes are ready, make a sandwich by clubbing one tikki with two pancakes.
Sandwich is ready. Transfer to a serving platter. Serve hot with tomato chutney. Garnish with fresh coriander spring. Kuttu Atta Sandwich is ready.
