Chatpate Baingan


CHATPATE BAINGAN





Chatpate Baingan can be served with any meal. Small baingan is stuffed with dry spices, cooked in mustard oil. 

Preparation Time - 10~15 min
Cooking Time       - 25~30 min

Ingredients 

Small baingan                        250gm 
Mustard oil                             5tbsp
Red chili powder                   1tsp 
Garam masala                       2tbsp
Coriander powder                 4tbsp
Salt                                           to taste 
Turmeric powder                  1/2tsp 
Dry mango powder               1tbsp 
Chat masala                           2tbsp
Cumin powder                       1tsp 
Chilli flakes                            1tsp 

For garnishing 

Roasted peanuts                    2tbsp
Green chili (slit)                   
Green coriander chopped   2tsp 

Method 

Slit the baingans from 2 sides. 




In a bowl ,take salt, red chilli powder, garam masala, coriander powder, dry mango powder, chat masala, red chilli flakes, cumin powder,turmeric powder and mix well. 
Add 2 tbsp of mustard oil in the mixture and mix well with the masala. 




Fill this masala in baingan properly. 


Heat the non-stick pan and put mustard oil into the pan. 
When the oil is hot, put the baingans into the pan one by one. 

Cover the pan with a lid and cook for 10 mins on a medium flame. 
Stir the baingans occasionally and cook till it becomes soft.
Transfer the cooked baingan into the serving plate and Garnish with roasted peanuts, slit green chili and chopped coriander.

Chatpate baingan is ready to serve.
